Cold Quinoa Salad

I don’t want to shock you or anything, but I’ve expanded my cooking repertoire beyond Bananaberry Bomb muffins to now include a quinoa salad. That keen-noa, people. Don’t make the same mistake as me and go around called it key-no-ah for at least a year before figuring out that you’re pronouncing it all wrong!

For a while, I’ve been trying to sway the household into eating quinoa instead of pasta and rice, but with only limited success. However, this salad has pushed them over the edge into quinoa-lover territory. They just rave about it! (Or maybe it’s just that they are trying to be encouraging?)

I find it a bit of an effort to make, so I always do a double batch and then I have lots to take into work for my lunch during the week. If you’d like to try this recipe with your family too, it is from The Looneyspoons Collection. It’s very filling — and healthy too!

    I have all three of the original Looney Spoons cook books. Not the collection one though. Tonight I am making a tomato chickpea mozzarella salad from Eat Shrink! It is delish.
     
    I found it easier to convince my clan to eat quinoa if it is cooked in chicken broth. They won’t scarf it down but they eat it. Better than a kick in the pants 😉

  2. I can say…..it is pretty good.  Master Chef Julie gave me some for my lunch a few weeks back….I pretty much devoured it.  I can’t say the same for my family – my husband thinks its too granola crunching for him!
