Cauliflower (without cream and cheesy goodness). It’s a Thing. A Yummy Thing.

Winter makes us crave comfort food, doesn’t it? For me, I think about mac & cheese, warm bread and butter, and yes, cauliflower. You know what kind of cauliflower I mean, right? The kind with all sorts of cream and cheese and 10,000 calories. Mmmm …

So, with a craving desperate enough (it’s gotta be desperate if I’m going to cook!), I sought out a recipe for cauliflower. And yes, all sorts of yummy, delicious ones popped up.

But also one for “Roasted Garlic Cauliflower.”Okay fine, my thighs said. Roasted it is.

It was ridiculously easy. Here’s how it goes:

1. Preheat the oven to 450 degrees F.

2. Using a head of cauliflower, take the florets and mix them in a large bowl with 3 tablespoons of olive oil, 2 tablespoons of minced garlic, and some salt and pepper. Ensure that all the florets get coated.

3. Pour all of this into a large, greased casserole dish and bake for 20-25 minutes.

4. To finish the dish, top with 1/3 cup of grated Parmesan cheese and 1 tablespoon of fresh parsley. Then broil for 3-5 minutes until golden brown.

And guess what? Everyone ate it all up — including the one fussy member of the family! (I won’t name names, but he’s really cute and six years old.)
