Easy Summer Salad: Broccoli Coleslaw and Ramen Noodles

When I shared the recipe for the Orzo salad, I promised I would also share this easy summer salad with you as well. This one was actually even easier and quicker to make. 10 minutes, I swear.

I definitely wouldn’t count ramen noodles in the “healthy basket” but they add great crunch to the salad and heh, it’s full of broccoli, so how bad can you go wrong?

Like the orzo salad, I pulled this recipe from AllRecipes.com, and it had been submitted by Effie and Jarmen.

Ingredients:

1 500 gram package of broccoli coleslaw

2 packages of chicken flavoured ramen noodles

1 bunch of green onions, chopped

1 cup unsalted peanuts

1 cup of sunflower seeds

1/2 cup white sugar

1/4 cup vegetable oil

1/3 cup cider vinegar

Directions:

1. In a large salad bowl, combine the slaw, broken noodles, and green onions

2. Whisk together the sugar, oil, vinegar and ramen seasoning packets. Pour over salad and toss to evenly coat. Refridgerate until chilled.

3. Top with peanuts and sunflower seeds before serving.

P.S. See the pottery cups in the photo above? I found those at a garage sale and they are just perfect for red wine! (Okay, so maybe they are a little small for my taste in red wine, but perfect for everyone else! ;))
